Several things: I was really pissed off with Snape, not so much because he killed Dumbledore, but more because of the way he treated Harry - like OotP, HBP was had that world-against-Harry factor, which is naturally frustrating for the reader. For the same reason, I felt a lot of vindictiveness towards Draco as well. (that scene in the train where he breaks Harry's nose - biatch, much?!).
One of your options for Ron/Hermione is perfect for my reaction of Harry/Ginny; like the ship but didn't like how it played out. I just wanted Ron and Hermione to get together, rather than have it dragged out as messily as it did.
Remus, for me, had just the right amount of book!time. Hagrid, too, and while the whole Aragog thing became stifling, I still love him. :)
Yeah, I would've rathered Ron and Hermione just shut up and get together... but that's why I like them as a characters more than I like them as human beings. I really hope they grow up in the next book.
