I've been wondering about that...maybe you can write a list of what you want to see? I've been wanting to write some post-DH pre-Epilogue stories, but I don't have any idea for it.
To answer your question, DH either destroy their pet theories or the new information is just not interesting. I think some fanons have people's hearts first so then canon's revelation is rendered meaningless to them.
