Hmm, with regards to your explanation about H/G, I don't quite agree to the extent that in my knowledge of canon, if a ship has been made to happen in the book, then it is canon. Like James and Lily, they are husband and wife, they died, so technically, they are not together, right? But the ship is canon.
Harry and Ginny was in a relationship. They were dating, yes, but everything Harry said about her made one to believe that yes, they are in a relationship. So whether they "broke up" or just "seperate" in HBP, the fact still remains that they were together. Jo made them together therefore, it is canon.
That is how I'd see it anyway. As far as I know, as long as it is stated in the book that these characters were in a relationship, it is canon. Even though Ron and Hermione were said to be together, I don't think they are canon... yet. :)
